Arroz con Pollo (Pure Trek’s Special Recipe)

One of the most requested recipes from our guests is the traditional Costa Rican Arroz con Pollo, and we are thrilled to share our own Pure Trek version of this flavorful dish. Packed with fresh, locally sourced ingredients and a lot of love, this recipe will transport you right back to the heart of Costa Rica.

Pure Trek’s Special Recipe:

Ingredients:

  • Good white rice
  • Dark meat boneless chicken (thighs preferred)
  • Red bell pepper (chopped)
  • Yellow or red onion (chopped)
  • Celery (shredded)
  • Garlic (chopped)
  • Cilantro (fresh, chopped)
  • Carrot (shredded)
  • Tomato paste (for color and flavor)
  • Olive oil
  • Salt
  • Oregano
  • Pepper

Instructions:

  1. Cooking the Rice (Mexican Style):
    • Heat a pot, add olive oil, and stir in the chopped garlic.
    • Add the rice and lightly fry it with the garlic.
    • Mix in a spoonful of tomato paste for flavor and color.
    • Add water, salt, and oregano. Cover the pot and cook the rice as usual.
  2. Cooking the Chicken:
    • Season your chicken with salt, pepper, and oregano.
    • In a hot pan, heat oil and sauté the chicken until it’s well seared and cooked through.
  3. Combining Ingredients:
    • In a separate pan, sauté the onion, red bell pepper, celery, and garlic in olive oil until softened.
    • Chop the cooked chicken into medium-sized pieces and add it to the vegetable mixture. Stir well.
    • Mix the chicken and vegetables into the cooked rice.
    • Add shredded carrots and cilantro at the end to keep the flavors fresh.
  4. Finishing Touches:
    • Taste for seasoning, and add salt, pepper, and extra oregano if needed.
